No Bake Cookie Dough Balls

I based this recipe off of Rachel Good Eats famous RGE Cookie Skillet, except I wanted to make little bite size, no bake, versions. I just didn't feel like turning the oven on to bake the skillet one day so I decided to make them no bake balls. These didn't last in our house more than a few days, they are so easy and so tasty. Let me know what you think!

 

No Bake Cookie Dough Balls

Ingredients:

Filling

  • 3 tbs maple syrup

  • 1/4 cup coconut oil - room temp/solid form

  • 1/3 cup almond butter (or any nut butter)

  • 1 tsp vanilla extract

  • 1 tbs unsweetened almond milk (my favorite is Elmhurst)

  • 1 1/4 cup almond flour

  • 1 tsp cinnamon

  • Optional: 2 scoops of @furtherfood

Outside

  • 1 bar of dark chocolate, melted

  • 1/2 tbs of melted coconut oil

  • Himalayan Sea Salt for sprinkling

Directions:

  1. Mix all of the filling ingredients in a bowl.

  2. Scoop out dough with a small ice cream scoop onto parchment paper and store in the fridge for 10 minutes.

  3. Melt the chocolate with the coconut oil over the stove or in the microwave.

  4. Remove the balls from the refrigerator and dip each cookie dough ball in the chocolate.

  5. Sprinkle some sea salt on top and let cool in freezer for 10 more minutes and enjoy! Keep these stored in the fridge for up to a week to stay fresh, although, I'd be surprised if they last you that long!
