No Bake Flax Balls

My friend actually told me about this recipe in college and I'm OBSESSED with it! These flax balls have everything I love in one bite, I could eat them everyday. This recipe is actually from AllRecipes, which my friend found through a google search, but I've changed them a little bit.

When I make these at home they are gone in one or two days (I live with my boyfriends family and there's six of us). I usually have to double or triple the recipe if I want them to last longer than that. They are a great snack for before a workout, or if you're craving something sweet any time of day. I've even had these in the morning with my breakfast!

NO BAKE FLAX BALLS

Yields about 18 Balls

2 cups oats

1 cup peanut butter (all natural peanut butter - no additives)

1 cup of ground flax seeds (I've used a flax chia blend in the past)

1/2 cup of raw honey (local is best!)

2 tsp vanilla extract

2 scoops of Further Food collagen peptides (optional)

1/2 dark chocolate bar cut into tiny pieces or 1/2 cup chocolate chips (enjoy life chocolate chips are my favorite)

  1. Mix all of these ingredients together in a bowl.

  2. Form into little bite size balls - this can be very messy and will stick to you hands less if you wet them first.

  3. Place them on a plate or baking sheet and freeze for about an hour, then you can store them in the refrigerator for a snack on the go!
