Pretzels are one of the best snacks around in my opinion, they have that perfect crunch with a salty finish. They really hit the spot for me when I'm craving something salty. I was introduced to Unique Pretzels at work; one of my colleagues bought the extra dark kind, which is used here, and from then on out our whole office was hooked.
I tend to crave something salty and sweet when I want a snack. I usually have some sort of dark chocolate around but I wanted to combine the two, my love for these pretzels and my love for dark chocolate. Honestly, these didn't come out like I had pictured in my head, but they are delicious so I decided to share anyways. These barely lasted one night in Dans house!
DARK CHOCOLATE PRETZEL BARS
20 Unique extra dark splits pretzels (about 3/4 of a bag)
2 tbs ground flax seed
1 tbs almond flour
1/4 cup + 2 tbs pure maple syrup
2 tbs melted coconut oil - 1/2 tbs water
1/2 cup melted EnjoyLife dark chocolate chips
Toppings: I used peanut butter and sea salt but you can go crazy here!
Add the pretzels to your food processor and process until roughly ground. Pour pretzels into a bowl and stir in the flax meal and almond flour. Then mix in your maple syrup, coconut oil, and water. Once that’s mixed together it will be slightly clumpy. Using a spoon, stir in the melted chocolate. Line a baking pan with parchment paper and press your mixture into the dish, spreading it across evenly (I used an 8x8 baking pan). Freeze for 20 minutes and add your toppings, I used peanut butter and sea salt! Cut into squares and store extras in the fridge or freezer.
